Cioppino (Zuppe di Pesce)

½ cup Extra virgin olive oil
4 Large carrots, minced
4 Onions, chopped
3 Stalks celery, chopped
3 Shallots, chopped
6 Cloves, garlic minced
6 cups Tomato Magic
3 cups Chicken broth
1 cup White wine
½ lb Filet of sole, cut in 2-inch pieces
½ cup Chopped, fresh parsley
1 tsp Each chopped fresh thyme and sage
2 lbs Each scallops and medium shrimp (shelled except for tail, and de-veined)
Heat oil in 8 quart saucepan. Add carrots, onions, celery, shallots and garlic; cook until tender.
Add Tomato Magic, chicken broth, wine, sole and herbs.
Cover, reduce heat to low and simmer 10 minutes.
Add shellfish, cover, and simmer about 15 minutes, or until fish is cooked throughout.
